Spicy Carrot Potato Mezhukkupuratti / Stir Fry


SPICY CARROT POTATO MEZHUKKPURATTI




This is an easy to make dry vegetarian dish from Kerala. It goes well with rice and other curries. It takes very less time to prepare and its a healthy dish also.

Ingredients:

1. Carrot- 1
2. Potato- 2
3. Oil- 1 1/2 tbsp
4. Onion- 1
5. Crushed garlic- 4
6. Chilli flakes- 1/2 tsp
7. Curry leaves- 1 spring
8. Kashmiri chilli powder- 1/2 tsp
9. Turmeric powder- 1/2 tsp
10. Salt- as needed
11. Water- 1 tbsp
12. Pepper powder- 1/2 tsp

Cut carrot and potato into thin long pieces.

Heat oil in a pan. Add onion, garlic, curry leaves and chilli flakes. Saute till it turns light golden. Mix chilli powder and turmeric powder. Saute for 1 minute. Add carrot and potato. Mix well. Pour 1 tbsp of water and cook closed in low flame. Stir occasionally. when the potato and carrot are cooked through, cook without the lid on until the vegetables are slightly roasted. Sprinkle salt and pepper powder. Mix well and switch off the flame.

Serve hot with rice.
