Parippu / Lentil Curry
PARIPPU / LENTIL CURRY
This is the traditional Kerala style parippu curry with coconut and its a perfect side for rice or chapati.
Ingredients:
1. Lentil (Split pigeon peas / yellow lentil / red lentil)- 1 cup
2. Onion- 1
3. Green chilli- 4
4. Tomato- 1
5. Turmeric powder- 1/2 tsp
6. Chilli powder- 1/2 tsp
7. Curry leaves- 1 spring
8. Grated coconut- 1 cup
9. Cumin- 1/2 tsp
10. Shallots- 2
11. Garlic- 2
12. Salt- as needed
13. Coconut oil- 1 tbsp
Into a pressure cooker, add lentil, onion, 2 number of green chilli, curry leaves, tomato, turmeric powder, chilli powder and salt. Pour enough water and cook for 2 whistles. Let the pressure go by itself.
Grind coconut, cumin, 2 number of green chilli, shallots and garlic to a fine paste adding 1/4 cup of water.
Open the lid of the cooker and mix the ground coconut paste. Put it back on stove and bring it to boil. Adjust seasoning. Switch off the flame when it starts boiling. Pour coconut oil and mix well.
Serve hot with rice or chapathi.
