Paripp Thengapaal Curry / Lentil Coconut Milk Curry


LENTIL COCONUT MILK CURRY 




Easy and delicious vegetarian curry with lentil. This curry is served with Ghee rice in Malabar region if you are a vegetarian. Lentil Coconut Milk Curry can be served with normal Rice also. Its creamy, easy to make and flavorful.

Ingredients:

1. Masoor dal / Red Lentils - 1/2 cup
2. Salt- as needed
3. Turmeric powder- 1/4 tsp
4. Green Chilli- 2
5. Water- 2 cup
6. Thin coconut milk- 1 cup
7. Coconut oil- 1 tbsp
8. Mustard- 1 tsp
9. Cumin seeds- 1/2 tsp
10. Sliced shallots- 6
11. Curry leaves- 2 springs
12. Kashmiri Chilli powder- 1/4 tsp

Cook lentil in a pressure cooker adding water, green chilli, turmeric powder and salt. Let the pressure go by itself.

Heat oil in a pan. Splutter mustard and cumin. Add shallots and saute till it turns light golden. Add curry leaves. Switch off the flame and immediately add chilli powder and mix well.

Open the cooker and pour coconut milk into it. Stir well and place it back on stove. Bring it to boil. Add fried shallots and boil for 1 minute. Switch off the flame.

Serve hot with Ghee rice or as a side dish for rice.
