Goan Recheado Masala Fish Fry
GOAN RECHEADO MASALA FISH FRY
The word Recheado means stuffed in Portuguese. Recheado masala is a red paste like masala which is stuffed in fishes and shallow fried in oil to prepare this mouth watering delicacy. This recipe is spicy, sweet and tangy.
Ingredients:
1. Fish (Pomfret / Mackerel / any big single bone fish)
2. Coconut toddy vinegar- 1/2 cup
3. Red chilli- 9
4. Ginger- 1/2 inch piece
5. Garlic- 5
6. Cumin seeds- 1/2 tsp
7. Peppercorns- 1/2 tsp
8. Cinnamon- 1 inch piece
9. Clove- 6
10. Sugar- 1/2 tsp
11. Salt- as needed
12. Turmeric powder- 1/4 tsp
13. Coconut oil- as needed
2. Coconut toddy vinegar- 1/2 cup
3. Red chilli- 9
4. Ginger- 1/2 inch piece
5. Garlic- 5
6. Cumin seeds- 1/2 tsp
7. Peppercorns- 1/2 tsp
8. Cinnamon- 1 inch piece
9. Clove- 6
10. Sugar- 1/2 tsp
11. Salt- as needed
12. Turmeric powder- 1/4 tsp
13. Coconut oil- as needed
In a bowl, add red chilli, ginger, garlic, cumin, peppercorns, cinnamon, clove, sugar, salt, turmeric powder and 1 tsp of coconut oil. Pour vinegar and mix well. Let it sit for 40 minutes and then grind it into a fine paste. This is the masala for the fish.
Marinate the fish well with the prepared masala for 10 minutes.
Heat coconut oil. Shallow fry the fish on both sides on medium flame until cooked through.
Serve hot.
Notes:
Though this traditional recipe is prepared with coconut toddy vinegar, it can be substituted with normal vinegar if you don't have it in stock.
