Coorg Pork


COORG SPECIAL PORK




A very famous Coorgi dish. This decadent, spicy and lip smacking Pork is a traditional recipe from Coorg.

Ingredients:

1. Pork- 1/2 kg
2. Oil- 1 tbsp
3. Onion- 1
4. Garlic- 4
5. Green chilli- 2
6. Coriander leaves- 1/2 bunch
7. Coriander seeds- 3/4 tbsp
8. Cumin seeds- 3/4 tsp
9. Mustard- 3/4 tsp
10. Kashmiri red chilli- 3 or 4
11. Salt- as needed
12. Water- 1/4 cup
13. Turmeric powder- 1/4 tsp
14. Vinegar- 1 tsp
15. Stock cube- 1/2 cube

Dry roast coriander seeds, cumin, mustard and kashmiri red chilli. Grind it into a fine powder.

Heat 1/2 tbsp of oil in a pan. Saute onion, garlic, green chilli and corinader leaves till it turns wilted. Switch off the flame. When its cold,  grind it into a paste adding 1/4 cup of water.

Marinate pork with powdered masala,  ground paste,  salt and turmeric powder. Move it into a pressure cooker.  Add stock cube and cook till the pork is done. Switch off the flame and let the pressure go by itself.

Once you open the cooker, mix vinegar and put it back on the stove. Adjust seasoning. Cook till it becomes dry and the masala coats the pork well. Pour 1/2 tbsp of oil on top and mix well. Switch off the flame.

Serve hot.
