Coconut Pancake


COCONUT PANCAKE




Coconut pancakes are very easy to make, delicious and a high protein delicacy. These delicious pancakes can be served as breakfast or a tea snack. Its a kids favorite recipe.

Ingredients:

1. Wheat flour- 1 cup
2. Grated coconut- 1/4 cup
3. Sugar- 4 tsp
4. Egg- 2
5. Coconut milk- 1/2 cup
6. Honey- 1 tbsp
7. Baking powder- 1 tsp
8. Vanilla essence- 1 tsp
9. Butter- as needed
10. Brown sugar- 1/4 cup

In a mixing bowl, add wheat flour, coconut, sugar, baking powder, egg, coconut milk, honey and vanilla essence.  Mix well and make a pouring consistency batter. Add water only if required.

Heat 1 tsp of butter in a non stick pan. Ladle some batter into the pan and sprinkle some brown sugar on top. Flip after 30 seconds and cook again for 30 seconds.

Serve delicious golden coconut pancakes hot with honey or maple syrup.
