Chicken Mixed Vegetable Stew


CHICKEN MIXED VEGETABLE STEW




This chicken stew with mixed vegetables is a delicious stew recipe with the goodness of lots of vegetables and so when served as a side with your main course, it makes a happy healthy meal.

Ingredients:

1. Chicken- 500 grams
2. Fennel seeds- 1/2 tsp
3. Peppercorns- 1/2 tsp
4. Cumin- 1/8 tsp
5. Coconut oil- 1 tbsp
6. Clove- 2
7. Cardamon- 2
8. Cinnamon- 1/2 inch piece
9. Onion cut into cubes- 1
10. Ginger julienne - 1 tbsp
11. Garlic julienne- 1 tbsp
12. Green chilli- 3
13. Red chilli- 1
14. Curry leaves- 1 spring
15. Salt- as needed
16. All purpose flour- 1/2 tsp
17. Carrot- 1
18. Green peas- 1/4 cup
19. Potato cubes- 1
20. Thin coconut milk- 1 cup
21. Thick coconut milk- 1/3 cup
22. Vinegar- 1/2 tsp
23. Coriander leaves- 2 tsp

Heat 1 tsp of oil in a pan. Roast fennel, peppercorns and cumin. Grind it into a powder and keep aside.

Heat oil in a pan. Fry cinnamon, cardamon and cloves.  Add onion, garlic, ginger, green chilli, red chilli and curry leaves. Saute till it turns translucent. Mix flour and stir for 2 minutes.  Add chicken, carrot, green peas and potato to this and saute for 5 minutes.  Pour thin coconut milk and vinegar.  Cook closed stirring occasionally till the chicken and vegetables are done. Lastly, pour thick coconut milk and mix the powdered masala. Boil for 3 minutes and switch off the flame. Garnish with coriander leaves.

Serve hot as a side for appam, pathiri etc.
