CHANA MASALA




Chana Masala or Choley Masala is one of the most popular dishes in India and Pakistan. It is a simple to make, spicy and tangy gravy that goes great with roti, batura etc. This recipe is a delightful way to showcase tasty white chickpeas.

Ingredients:

1. White Chickpeas- 1 cup
2. Oil- 1 1/2 tbsp
3. Onion- 2
4. Green chilli- 2
5. Ginger- 1 tbsp
6. Garlic- 1 tbsp
7. Chilli powder- 2 tsp
8. Turmeric powder- 1/2 tsp
9. Coriander powder- 1 tbsp
10. Cumin powder- 1/2 tsp
11. Garam masala- 1 tsp
12. Chopped tomato- 2
13. Coriander leaves- 2 tbsp
14. Salt- as needed

Soak chickpeas in water for overnight. Cook in a pressure cooker adding 3 cups of water and some salt. Drain and keep the chickpeas and stock aside.

Heat 1/2 tbsp of oil in a pan. Add onion, green chilli, ginger and garlic. Saute till wilted and switch off the flame. Grind it to a paste when its cold.

Heat 1 tbsp of oil. Add the ground paste and saute till it turns light golden. Add chilli powder, turmeric powder, coriander powder, cumin powder and garam masala. Saute for 2 minutes. Add tomato and 1/4 cup of stock. Cook till tomato becomes soft. Mix chickpeas and rest of the stock. Boil to the required gravy consistency. Adjust seasoning. Lastly, add coriander leaves and mix well.

Serve hot.
