Bengali Chaler Payesh / Rice Pudding


BENGALI CHALER PAYESH





Chaler payesh is a delicious Bengali kheer or rice pudding. It is very easy to make and is a perfect dessert for any occasions.

Ingredients:

1. Basmati rice- 1/3 cup
2. Sugar- 1/2 cup
3. Water- 2/3 cup
4. Milk- 1 litre
5. Cardamon- 4
6. Bay leaf- 2
7. Ghee- 2 tsp
8. Cashew nuts- 1 tbsp
9. Raisins- 1 tbsp
10. Pistachios- 1 tbsp

Pour water into a pressure cooker. Mix ghee and 2 tbsp of sugar. Bring it to boil. Add rice when it starts boiling. Close the cooker and initially do not put the whistle on. Put the whistle on when steam starts coming through the whistle hole and immediately reduce flame to low. Cook for exact 5 minutes and switch off the flame. Let the pressure go by itself.

Take milk in a sauce pan. Add cardamon and bay leaf. Bring it to boil. Add rest of the sugar and cooked rice when it starts boiling. Stir continuously. Cook till it becomes thick and creamy. Mix cashew nuts, raisins and pistachios. Boil for 2 more minutes and switch off the flame. Remove bay leaf from the dessert.

Refrigerate and serve chilled.


Notes:

Chaler payesh can be served hot or warm also. But it taste better when chilled.
