Aval / Flattened Rice Kesari


AVAL KESARI




Aval Kesari is another variety of kesari made with flattened rice or beaten rice which is so mouth watering. This delicious sweet is perfect for any celebration or to satisfy your sweet cravings. 

Ingredients:

1. Aval / flattened rice- 1 cup
2. Ghee- 2 tbsp
3. Cashew nuts- 10
4. Water- 2 1/2 cup
5. Cardamon powder- 1/2 tsp
6. Sugar- 1 cup

Dry roast aval for 3 minutes on medium flame without getting it burnt. grind it into a coarse powder when cold.

Boil water.

Heat 1 1/2 tbsp Ghee in a non stick pan. Roast cashew nuts and keep aside.

In the same ghee, roast the powdered aval for 5 minutes on low flame. Take care not to burn it. Add boiling water and stir well to make sure that no lumps are formed. Once the entire moisture is absorbed, add sugar and mix well. Continue stirring till the mixture becomes slightly thick. Add roasted cashew nuts and cardamon powder. Mix well. Add 1/2 tbsp of Ghee and stir till the kesari starts moving together as a whole or till it starts not sticking to the sides of the pan. Switch off the flame.

Transfer into a plate and its ready to be served.

Serve hot.
