Mukkom Special Kappa Biriyani


MUKKOM AMMACHI SPECIAL KAPPA BIRIYANI




This recipe is from my Grand-mom. There is no way I go home for vacation and come back without eating this special delicacy. Its tasty beyond words and every bite of it is filled with ammachi's love.

Ingredients:

1. Tapioca- 1 1/2 kg
2. Beef with bone- 1 kg
3. Grated Coconut- 1 cup
4. Shallots- 3
5. Garlic- 2
6. Green Chilli- 2
7. Peppercorns- 1 1/2 tsp
8. Fennel seeds- 1 tsp
9. Cinnamon- 1 inch
10. Curry leaves- 1 spring
11. Coriander powder- 1 tsp
12. Salt- as needed
13. Chilli powder- 2 tsp
14. Turmeric powder- 1/2 tsp
15. Water- as requird
16. Coconut oil- 1 tbsp

Cut Tapioca into cubes and cook them in water until soft enough. Drain and keep aside. 

Mix Beef with Chilli powder, Turmeric powder and salt. Cook in a pressure cooker till its cooked through. Drain and set aside both the cooked meat and the stock.

Grind Coconut, Shallots, Garlic, Green Chilli, Peppercorns, Fennel, Cinnamon, Curry leaves, Coriander powder and salt adding the Beef stock to a thick paste.

In a wide vessel, put the Tapioca and top it with the Beef. Add the ground paste. Do not mix it at this stage. Cook in low flame till steam starts coming. Using a wooden spatula, mix everything really well. Add 1/4 cup of water only if you feel its too dry. Usually the stock is enough to make the Kappa Biriyani moist. Adjust salt. Once everything is incorporated well, switch off the flame and pour Coconut oil on top. Mix gently.

Serve delicious Kappa Biriyani hot with pickle and a glass of black tea.
