Mathanga Parippu Curry / Pumpkin Lentil Curry
MATHANGA PARIPPU CURRY /
PUMPKIN LENTIL CURRY
This is a basic recipe prepared in every kitchen in Kerala. Pumpkin and Lentil in a coconut based gravy and so it goes well with Rice.
Ingredients:
1. Pumpkin cubes- 2 cup
2. Lentil / Dal- 1/2 cup
3. Curry leaves- 1 spring
4. Green Chilli- 2
5. Turmeric powder- 1/4 tsp
6. Salt- as needed
7. Grated Coconut- 3/4 cup
8. Shallots- 2
9. Garlic- 1
10. Water- as required
11. Cumin- 1/2 tsp
12. Coconut oil- 1 tbsp
13. Mustard- 1 tsp
14. Red Chilli- 3
Grind Coconut, Shallots, Garlic and Cumin adding some water to make a paste.
Mix Pumpkin, Lentil, Curry leaves, Green Chilli, Turmeric powder and salt in a pressure cooker and cook for 2 whistles. After you open the cooker, put it back on stove and add the ground paste. Add more water if required. Let it boil well and switch off the gas.
Heat Coconut oil. Splutter Mustard. Roast Red Chilli. Pour this over the prepared curry and stir well.
Serve hot with Rice.
