MADURAI SPECIAL POTATO MASALA




Madurai Potato Masala popularly known as Kizhangu Pottlam is a spicy masala curry made with Potatoes and its served wrapped in Lotus leaves. Its so famous that one visiting Madurai must try it. 

Ingredients:

1. Potato- 3
2. Oil- 2 tbsp
3. Mustard- 1/2 tsp
4. Cumin- 1/4 tsp
5. Fennel- 1/4 tsp
6. Chopped Garlic- 4
7. Curry leaves- 1 spring
8. Mint leaves- 1 tbsp
9. Coriander leaves- 2 tbsp
10. Green Chilli- 2
11. Chopped Onion- 2
12. Salt- as needed
13. Asafoetida- 1/4 tsp
14. Chilli powder- 1 tsp
15. Turmeric powder- 1/2 tsp
16. Gram flour- 2 tbsp
17. Water- 3/4 cup

Cook potatoes in a pressure cooker. Peel and dice into small cubes. 

Heat oil in a pan. Splutter Mustard. Roast Cumin and Fennel. Add Garlic, Mint, Coriander leaves, Curry leaves and Green Chilli. Saute for 1 minute. Add Onion, Asafoetida and salt. Saute till it turns nice and brown. Mix Chilli powder and Turmeric powder. Saute for 1 minute. Add Gram flour and fry for 1 minute. Pour water and let it boil. Add in the cooked Potatoes and slightly mash with the back of the spatula. Roast for 5 minutes and switch off the flame.

Serve hot with Roti, Rice etc.
