Coconut / Thenga Pathiri
COCONUT / THENGA PATHIRI
A traditional Malabar dish which can be served with any side dish. It is simple to make and can be served as a main dish.
Ingredients:
1. Rice- 1 cup
2. Cooked rice- 3/4 cup
3. Grated Coconut- 1 cup
4. Salt- as needed
5. Water- as required
Soak Rice for 4 to 5 hours.
Grind soaked rice, cooked rice, salt and water to make a thin batter.
Heat a non-stick pan. Pour a ladle of batter and spread it to the sides. Sprinkle some Coconut on top. Pour another spoonful of batter on top sealing the coconut inside. Cook on both sides in medium heat.
Serve hot with any spicy side dish of your choice.
Notes:
Brush the pan with some coconut oil if the Pathiri is sticking to the pan.
