Tomato Coconut Milk Curry


TOMATO COCONUT MILK CURRY




A tasty and easy curry which can be made on a busy day in 10 minutes. Vibrant and bursting with flavor, this curry can be served with Chapathi, Rice, Steam Cake etc. Its an ideal recipe for someone who is new to cooking because of its sheer simplicity.

Ingredients:

1. Chopped Tomato- 4
2. Ghee- 1/2 tbsp
3. Fenugreek seeds- 1/4 tsp
4. Cumin- 1/2 tsp
5. Onion- 2
6. Green Chilli- 2
7. Ginger Garlic paste- 2 tsp
8. Chilli powder- 2 tsp
9. Turmeric powder- 1/4 tsp
10. Coriander powder- 1 1/2 tsp
11. Garam masala- 3/4 tsp
12. Water- 1 cup
13. Salt- as required
14. Thick Coconut milk- 1 cup
15. Sugar- 1/2 tsp
16. Coriander leaves- 1 tbsp

Heat Ghee. Roast Fenugreek and Cumin. Add Onion, Green Chilli and Ginger Garlic paste. Saute till it turns light golden. Mix Chilli powder, Turmeric powder, Coriander powder and Garam masala. Saute for 1 minutes. Add Tomato and saute for 2 minutes. Pour water and cook closed for 5 minutes. Open and stir well. Add Coconut milk and sugar. Mix well. Add Coriander leaves and combine well. After adding Coconut milk do not boil too much.

Delicious Tomato Coconut milk curry is ready. Serve hot.
