Thalappakatti Mutton Biriyani


THALAPPAKATTI MUTTON BIRIYANI




Dindigul Thalappakatti Mutton Biriyani is the authentic traditional Tamil Nadu Biriyani. It is one of the most delicious Biriyani and has a very unique flavor.

Ingredients:

1. Mutton- 1/2 kg
2. Turmeric powder- 1/2 tsp
3. Chilli powder- 1 1/2 tsp
4. Oil- as needed
5. Onion- 2
6. Tomato- 2
7. Mint leaves- 1 cup
8. Green Chilli- 4
9. Ginger- 1 inch piece
10. Garlic- 5
11. Ghee- 1 tbsp
12. Bay leaf- 1
13. Cinnamon- 2 inch stick
14. Cloves- 3
15. Cardamon- 2
16. Fennel seeds- 1/2 tsp
17. Chopped Coriander leaves- 1 cup
18. Salt- as required
19. Biriyani rice / Jeeragasala Rice- 2 cup
20. Garam masala- 1 1/2 tsp
21. Curd- 1/4 cup

In a cooker, mix Mutton, Turmeric powder, 1/2 tsp Chilli powder, 1 tsp oil, 1/2 cup water and salt. Close the cooker and Cook Mutton well. Once cooked, drain and keep the cooked Mutton and stock aside.

In a cooker, boil 4 cups of Mutton stock. Add Rice. Adjust salt. Close cooker and cook for exact 5 minutes in simmer. Switch off the gas and let it rest for 30 minutes.

Heat 2 tsp oil in a pan. Slightly saute Onion, Ginger, Garlic, Mint leaves and Green Chilli. Grind it into a paste. Do not add water.

In a pan, heat Ghee and 5 tbsp oil together. Roast Bay leaf, Cinnamon, Cloves, Cardamon and Fennel. Fry Coriander leaves well. Add the ground paste and salt. Saute till it turns golden. Mix 1 tsp Chilli powder and Garam masala. Saute for 2 minutes. Add Tomato and cook till it turns mushy. Mix Curd. Add Mutton once everything is sauteed well. Mix well. Add the cooked Rice and mix well. Cook closed in low flame for 3 to 4 minutes. Switch off flame and let it sit for 10 minutes.

Garnish with Coriander leaves and serve hot with Raita, Papad and Pickle.
