POHA
Poha is a quick, light and healthy breakfast or snack food made of beaten rice or flattened rice (Aval). This is a popular dish in Maharashtra and Gujarat.
Ingredients:
1. Flattened rice / Aval- 2 cup
2. Oil- 1 1/2 tbsp
3. Cumin- 1 tsp
4. Mustard- 1 tsp
5. Chopped onion- 1
6. Potato- 1 ; cut into small cubes
7. Green Chilli- 3
8. Curry leaves- 1 spring
9. Peanut- 3 tbsp
10. Turmeric powder- 1/4 tsp
11. Salt- as needed
12. Sugar- 1 tsp
13. Lime juice- 1 tsp
14. Coriander leaves- 1 tbsp
Rinse the flattened rice in running water till they become soft.
Heat oil. Roast peanuts and keep aside.
In the same oil, splutter Cumin and Mustard. Saute Onion, Green Chilli and Curry leaves till wilted. Add Potato and cook closed in low flame. Stir occasionally. Once the potatoes are cooked through, mix Turmeric powder. Saute for 1 minute. Mix roasted Peanuts. Mix flattened rice. Add salt, sugar, Lime juice and Coriander leaves. Mix well and cook for 3 minutes.
Serve hot.
