Pineapple Curd Curry


PINEAPPLE CURD CURRY




Delicious sweet and tangy Pineapple Curd Curry is an excellent combination with Rice. 

Ingredients:

1. Chopped Pineapple- 1 1 /2 cup
2. Water- 1/2 cup
3. Green Chilli- 4
4. Curry leaves
5. Grated Coconut- 3/4 cup
6. Curd- 1 1/2 cup
7. Mustard- 1 1/4 tsp
8. Salt- as needed
9. Coconut oil- 1 tbsp
10. Red Chilli- 3

Blend Curd, Coconut, 1/4 tsp Mustard and 2 Green Chilli well in a blender.

Cook Pineapple with water, Curry leaves and 2 Green chilli. Pour the ground paste. Adjust salt. Heat it. Do not boil. Turn off flame when its about to boil.

Heat Coconut oil. Splutter 1 tsp of Mustard. Roast Red Chilli. Pour this over the prepared Pineapple Curd curry and mix well. 

I personally prefer serving this curry after keeping it untouched for 1 day.  The sweet and tangy flavors are on point when had on the next day. 

Serve with Rice.
