MUTTA / EGG THEEYAL




Mutta Theeyal is a type of Egg curry made with roasted Coconut and spices. This mouth watering curry goes well with Indian breads and Rice. 

Ingredients:

1. Boiled Eggs- 4
2. Grated Coconut- 1 cup
3. Peppercorns- 1 tsp
4. Curry leaves- 2 springs
5. Shallots- 2
6. Coriander powder-- 1/2 tsp
7. Turmeric powder- 1/4 tsp
8. Chilli powder- 1 1/4 tsp
9. Water- as required
10. Salt- as needed
11. Coconut oil- 1 1/2 tbsp
12. Red Chilli- 2
13. Mustard- 1 tsp
14. Onion- 2
15. Tomato- 2

Roast Coconut, Peppercorns, Shallots and 1 spring Curry leaves till golden brown. Reduce flame to low and add Chilli powder, Turmeric powder and Coriander powder. Saute for 1 minutes and switch off gas. Let it cool down completely. Once its cold, grind it into a paste adding enough water.

Heat oil. Splutter Mustard. Roast Red Chilli and 1 spring Curry leaves. Saute Onion till it turns brown. Add Tomato and saute till it turns mushy. Mix the ground coconut paste and bring it to boil. Adjust salt. Add Eggs and stir well. 

Serve hot with Rice, Putt, Chapathi etc.
