GOLI BAJE / MANGALORE BAJJI




Goli Baje is a popular Udupi Mangalore evening snack. They are deep fried balls with soft sponginess inside and a crisp layer outside. These delicious Mangalore bondas are served with some spicy chutney. 

Ingredients:

1. All purpose flour- 3/4 cup
2. Gram flour- 1/2 tsp
3. Chopped Ginger- 1/2 tsp
4. Chopped Green Chilli- 1/2 tsp
5. Curry leaves- 1 spring
6. Cooking soda- 1/4 tsp
7. Asafoetida- pinch
8. Curd- 1/3 cup
9. Oil- for frying
10. Salt- as needed

Mix flour, Gram flour, Ginger, Green Chilli, Curry leaves, cooking soda, salt, Asafoetida and Curd to make a medium consistency batter. You can add 1 or 2 tsp of water if you think the batter is too thick. Let it rest for 1/2 hour.

Heat oil. Once its hot, reduce flame to low. Scoop small balls from the batter and deep fry in oil till golden brown. Apply oil in your hands to easily scoop the batter without sticking to your hands. 

Serve hot with Chutney.
