EGG PICKLE




Egg Pickle is a delicious variety of Indian style pickle that can be served with Rice. Its spicy and aromatic.

Ingredients:

1. Boiled Eggs- 4
2. Oil- 1 tbsp
3. Mustard- 1/2 tsp
4. Urad dal- 1/2 tsp
5. Split Chickpeas / Chana dal- 1/2 tsp
6. Asafoetida- pinch
7. Garlic- 1/4 cup
8. Curry leaves- 1 spring
9. Turmeric powder- 1/4 tsp
10. Chilli powder- 1 1/2 tbsp
11. Coriander powder- 1/2 tsp
12. Salt- as needed
13. Vinegar- 2 tbsp
14. Fenugreek powder- 1/8 tsp

Take the Egg whites and cut them into long pieces. Discard yolks.

Heat oil. Splutter Mustard. Roast Urad dal and Chana dal. Add Asafoetida. Add Garlic and Curry leaves. Saute till Garlic turns light golden. Reduce the flame into low. Add Chilli powder, Turmeric powder, Coriander powder, Fenugreek powder and saute for 1 minute. Mix the egg whites. Adjust salt. Switch off the gas and pour Vinegar. Mix well. Let it cool down completely.

When it reaches room temperature, transfer the pickle into a glass jar. Serve with Rice or Roti.
