Bhuga Chawar / Sindhi Fried Rice
BHUGA CHAWAR / SINDHI FRIED RICE
Bhuga Chawar is an astonishing Sindhi delicacy where Rice is cooked with lots of Onion and flavored with whole garam masala.
Ingredients:
1. Basmati Rice- 1 cup
2. Ghee- 1 tbsp
3. Cumin- 1 tsp
4. Bay leaf- 2
5. Cardamon- 2
6. Cloves- 2
7. Cinnamon- 1 inch piece
8. Onion- 2
9. Chopped Tomato- 1
10. Salt- as needed
11. Chilli powder- 1/2 tsp
12. Turmeric powder- 1/4 tsp
13. Boiling Water- 2 cup
Heat Ghee in a cooker. Roast Cumin, Bay leaf, Cardamon, Clove and Cinnamon. Add Onion and saute till it turns golden brown. Add Tomato and saute till it turns mushy. Mix Chilli powder and Turmeric powder. Add rice and fry for 1 minute. Pour boiling water. Adjust salt. Close the cooker. Initially do not put whistle. When steam starts coming through the whistle hole, put the whistle and turn the fame into low. Cook for exact 5 minutes and turn off the gas. Let it rest for 35 to 40 minutes.
Open the cooker and mix well.
Serve hot with Raita and any curry of your choice.
