Banana Coconut Loaf


BANANA COCONUT LOAF




This is one delicious sweet bread with the tropical blend of Banana and Coconut. This healthy Banana Coconut Loaf is so moist and full of Banana and Coconut flavor. 

Ingredients:

1. All purpose flour- 1 cup
2. Wheat flour- 1 1/2 cup
3. Brown sugar- 3/4 cup
4. Salt- 1/4 tsp
5. Baking powder- 2 tsp
6. Baking soda- 1/2 tsp
7. Grated Coconut- 1 cup
8. Mashed Banana (Robusta / Cavandish)- 1 cup + 1 tbsp
9. Coconut oil- 3/4 cup
10. Buttermilk- 3/4 cup

Mix flour, Wheat flour, Brown sugar, salt, Baking powder, Baking soda and Coconut.

Preheat oven at 180 C. Grease a loaf pan.

In a mixing bowl, whisk Banana, oil and Buttermilk well. Add flour mix and fold in till combined. Pour it into the greased pan and bake for 50 minutes or till the skewer comes out clean.

Cool in the pan itself for 10 minutes and then cool completely on a wired rack.

Enjoy with a hot cup of Coffee.
