Vermicelli Chicken Upma


VERMICELLI CHICKEN UPMA




A traditional South Indian tiffin made with Vermicelli and Chicken. This heavenly Vermicelli Chicken Upma can be served as a breakfast or snack.

Ingredients:

1. Boneless Chicken- 1 cup
2. All purpose flour- 1 tbsp
3. Corn flour- 1 tbsp
4. Chilli powder- 1 tsp
5. Salt- as required
6. Lime juice- 1 tsp
7. Oil- as required
8. Vermicelli- 100 gms
9. Onion- 1
10. Carrot- 1
11. Coriander leaves- 2 tbsp
12. Water- as required
13. Capsicum- 1
14. Pepper powder- 1 tsp

Cut Chicken into small pieces. Marinate with flour, Corn flour, Chilli powder, Lime juice and salt for 1 hour. Fry in oil and keep aside.

Cook Vermicelli in Water adding salt. Drain. Mix with 1 tsp of oil to prevent from sticking.

Heat 2 tsp of oil in a pan. Saute Onion, Carrot and Capsicum. Mix fried Chicken, Vermicelli and Pepper powder. Toss well. Adjust seasonings. Garnish with Coriander leaves.

Serve delicious Vermicelli Chicken Upma warm and enjoy..
