VEGETABLE KURMA




Vegetable Kurma is a very popular and delicious South Indian curry made with mixed veggies, coconut and spices. It pairs well with Appam, Porotta, Chapathi etc

Ingredients:

1. Onion- 1
2. Carrot- 1
3. Potato- 1
4. Cooked Green Peas- 1/2 cup
5. Curry leaves- 1 spring
6. Grated Coconut- 1 cup
7. Green Chilli- 4
8. Ginger- 1 tsp
9. Garlic- 1 tsp
10. Poppy seeds- 1 tbsp
11. Coconut oil- 1 tbsp
12. Fennel seeds- 1 tsp
13. Cinnamon- 1 inch stick
14. Chopped Tomato- 1
15. Oil- 1 tbsp
16. Water- as required
17. Salt- as required
18. Coriander leaves-- 1 tbsp

Cut Onion, Potato and Carrot into small cubes.

Grind Coconut, Green Chilli, Ginger, Garlic and Poppy seeds into a paste adding some water.

Heat oil. Roast Fennel and Cinnamon. Add Onion and curry leaves. Saute till Onion turns transparent. Add Tomato, Carrot and Potato. Pour water just enough to cook the veggies. Mix Green Peas when its almost cooked. Once veggies are cooked well, add the paste and enough water for the gravy. Don't add too much water. This curry has a thick gravy. Mix Coriander leaves when it starts boiling. Switch off the flame. Pour Coconut oil on top as dressing. Adding Coconut oil at last enhances a nice aroma and a special flavor. 

Serve as a side for your favorite breakfast.
