Thai Chicken Satay with Peanut Sauce


THAI CHICKEN SATAY WITH PEANUT SAUCE




Simple appetizer or a main dish!! Easy Thai Chicken Satay in a creamy Peanut sauce makes this satay something spectacular. It is sweet as well as pungent. Satay is a dish of seasoned, skewered and grilled meat served with a sauce.

Ingredients for the Thai Chicken Satay:

1. Chicken boneless cubes- 2 cup
2. Chopped Lemongrass- 1 stalk
3. Minced Garlic- 3
4. Coconut milk- 1/4 cup
5. Lime juice- 1/8 cup
6. Honey- 1 1/2 tbsp
7. Coconut oil- 1 1/2 tbsp
8. Soy sauce- 1 tbsp
9. Chilli paste- 1 tsp
10. Salt- as required
11. Wooden skewers

Soak wooden skewers in water for at least 30 minutes.

Combine Lemongrass, Garlic, Coconut milk, Lime juice, Honey, Coconut oil, Soy sauce, Chilli paste and salt. Whisk well. Add Chicken and mix well. Cover and refrigerate for 2 hours.

Thread the Chicken pieces on to the skewers.

Grill on medium heat for 4 to 6 minutes on each side or until the Chicken is fully cooked. 


Ingredients for Peanut sauce:

1. Creamy Peanut Butter- 3 tbsp
2. Coconut milk- 1/4 cup
3. Lime juice- 1 tbsp
4. Honey- 1 tbsp
5. Chilli paste- 1 tsp
6. Minced Garlic- 2
7. Chopped Spring Onion- 1 tbsp
8. Coriander leaves- 1 tbsp
9. Water- if required
10. Salt- pinch

Combine Peanut Butter, Coconut Milk, Lime juice, Honey, Chilli paste, Garlic, Spring Onion, Coriander leaves and Salt. Whisk well. Add water only if you think the sauce is too thick for your liking. 

Serve warm Thai Chicken Satay with delicious Peanut sauce.
