Ros Omelette / Goan Omelette Curry


ROS OMELETTE / GOAN OMELETTE CURRY




Ros Omelette or Ras Omelette is a snack and street food in Goan cuisine. Its absolutely delicious and can be paired with Roti, Appam etc.

Ingredients:

1. Eggs- 3
2. Chopped Onion- 3/4 cup
3. Chopped Tomato- 1/4 cup
4. Oil- 1 tsp + 1 tbsp
5. Chopped Green Chilli- 3
6. Coriander leaves- 1 tbsp
7. Salt- as required
8. Grated Coconut- 1 cup
9. Cumin- 1/2 tsp
10. Coriander powder- 1/4 tsp
11. Ginger- 1/2 tbsp
12. Peppercorns- 2 tsp
13. Bay leaf- 1
14. Turmeric powder- 1/4 tsp
15. Water- 1 cup

Whisk the eggs till they are frothy. Mix 1/4 cup Onion, Tomato, 1 Green Chilli, Coriander leaves and Salt. 

Heat 1 tsp oil in a pan and make Omelette.

Grind Coconut, 2 Green chilli, Cumin, Coriander powder, Ginger, Peppercorns and Turmeric powder into a thick paste.

Heat 1 tbsp oil. Saute 1/2 cup Onion till they are soft. Add the Coconut paste and stir till it thickens and oil starts to separate from the sides. Add Bay leaf and water. Bring it to boil. Adjust seasonings. Allow it to boil for 5 minutes or till it has a thick gravy.

Place the Omelette on a plate and pour the gravy over the Omelette. Serve hot.
