Red Coconut Chutney


RED COCONUT CHUTNEY




Kerala style spicy and pungent flavored chutney which goes well with most of the South Indian breakfast items. Its a perfect accompaniment for Dosa, Idli etc.

Ingredients:

1. Grated Coconut- 1 cup
2. Chilli powder- 1 1/2 tsp
3. Shallots- 8
4. Ginger- 1 tsp
5. Water- 1/4 cup
6. Coconut oil- 1 tbsp
7. Mustard- 1/2 tsp
8. Curry leaves- 1 spring
9. Salt- as required

Grind Coconut, Chilli powder, 4 Shallots, Ginger and Salt adding water to a thick paste.

Chop rest of the 4 Shallots into thin slices.

Heat Coconut oil. Splutter Mustard. Roast sliced Shallots and Curry leaves well. Add the paste and mix well. Add more water only if you think its too thick for your liking. Do not boil. Switch off flame when its about to boil.

Red Coconut Chutney is ready and enjoy it with your favorite breakfast.
