Rasgulla
RASGULLA
Rasgulla is a traditional dessert, soft and spongy cheese balls in light and sweet mild cardamon flavored sugar syrup. This mouth watering dessert will literally melt in your mouth.
Ingredients:
1. Milk- 1 litre
2. Vinegar- 1 1/2 tbsp
3. Water- 2 1/2 cup
4. Sugar- 1 cup
5.Cardamon- 2
6. Rose water- 1/2 tbsp
Boil Milk. Keep the boiled milk on rest for 1 minute. Add Vinegar and mix properly so that the milk will curdle. Strain and wash it really well under running water to remove any left over milk. Squeeze out water properly. Knead it into a soft dough. Knead at least for 7 to 8 minutes or till oil appear in your hands. Make small balls.
Mix water, sugar, cardamon and rose water. Boil. When it starts boiling add the balls and cook on high flame keeping the lid closed for 5 minutes. After 5 minutes reduce to simmer and cook for 10 minutes. Off the gas. Do not open the lid during cooking and for at least 30 minutes after switching off the stove.
After 30 minutes the soft and spongy Rasgulla are ready to be served. Taste better when had after one day.
Notes:
1. For soft and spongy Rasgulla it is very important that you wash well after straining the curdled milk, completely squeeze out all the water and properly knead it into a soft dough.
