Potato Carrot Stew


POTATO CARROT STEW




Another delicious recipe from my Mom's kitchen. All time favorite in my family and it taste heaven when served with Palappam or Vellayappam. Potato carrot stew is very easy to make. Its rich and flavor packed.

Ingredients:

1. Potato- 3
2. Chopped Carrot- 1
3. Green Chilli- 5
4. Chopped Garlic- 2 tsp
5. Chopped Ginger- 2 tsp
6. Curry leaves- 1 spring
7. Thick Coconut milk- 1 cup
8. Thin Coconut milk- 1 cup
9. Water- if required
10. Salt- as required
11. Pepper powder- 1 tsp
12. Coconut oil- 1 tbsp
13. Chopped Onion-1

Boil Potatoes. Peel and mash them.

Heat oil. Saute Onion, Carrot, Green Chilli, Garlic, Ginger and Curry leaves till wilted. Add salt. Mix mashed potatoes and saute for 1 minute. Pour thin Coconut milk and bring it to boil. Add Pepper powder. Pour thick Coconut milk. Add water only if you think its too thick. This curry tends to thicken over time. Do not boil. Switch off flame when its about to boil. 

Serve hot with Appam, Idiyappam etc.
