Pepper Chicken Roast
PEPPER CHICKEN ROAST
A simple yet extremely flavorful Chicken recipe. Its spicy but not over the top. This dish goes well with Rice and Roti.
Ingredients:
1. Chicken- 1/2 kg
2. Turmeric powder- 1 tsp
3. Pepper powder- 2 tbsp
3. Oil- as required
4. Mustard- 1 tsp
5. Chopped Garlic- 1 tsp
6. Chopped Ginger- 1 tsp
7. Green Chilli- 2
8. Curry leaves- 1 spring
9. Thengakoth / Coconut pieces- 1/2 cup
10. Onion- 3
11. Tomato- 1
12. Chilli powder- 1 tsp
13. Coriander powder- 1 1/2 tbsp
14. Garam masala- 1/2 tsp
15. Salt- as required
Marinate Chicken with 1/2 tsp Turmeric powder, 1 tbsp Pepper powder and salt for 1 hour. Fry it in oil and keep aside.
Heat 1 tbsp oil in a pan. Splutter Mustard. Add Garlic, Ginger, Green Chilli and Curry leaves. Saute them till the raw smell disappear. Add Thengakoth and fry them till light golden. To this add sliced Onion and salt. Once onion turns golden add chopped Tomato and saute till it turns mushy. Add 1/2 tsp Turmeric powder, 1 tbsp Pepper powder, Chilli powder, Coriander powder and Garam masala. Saute everything well. Add fried Chicken and mix well. Cook closed for 5 minutes in low flame.
Simple and easy Pepper Chicken roast is ready. Enjoy with your Rice, Roti etc.
