Papaya Pulissery
PAPAYA PULISSERY
Another recipe from my mom's kitchen. It is a yogurt based curry with the flavors of Papaya. It is extremely delicious with Red Rice. Pulissery is a usual part of a Kerala lunch.
Ingredients:
1. Papaya cut into cubes- 3 cup
2. Shallots- 22
3. Green Chilli- 4
4. Curry leaves- 3 spring
5. Turmeric powder- 1/2 tsp
6. Fenugreek- 1/8 tsp
7. Grated Coconut- 1 cup
8. Cumin- 1 tsp
9. Garlic- 2
10. Curd- 2 cup
11. Coconut oil- 1 tbsp
12. Red Chilli- 2
13. Salt- as required
14. Water- 1 1/2 cup
15. Mustard- 1 tsp
Cut 20 Shallots into pieces.
Take a cooker. Add Papaya, Shallot pieces, 3 Green Chilli, 1 spring Curry leaves, Turmeric powder, Fenugreek, salt and water. Cook for 2 whistles.
Grind Coconut, Cumin, Garlic, 1 Green Chilli, 1 spring Curry leaves, 2 Shallots and Curd well.
Once you open the cooker, using the back of a spoon slightly mash the Papaya. Put it back on the stove. Add the grinded coconut-curd paste and mix well. Adjust salt. Switch off gas before boiling. Make sure you don't boil the curry.
Heat Coconut oil. Splutter Mustard. Roast Red Chilli and 1 spring Curry leaves. Pour this over the curry.
Serve with Red Rice.
