Pal Payasam / Kerala Rice Kheer


PAL PAYASAM / KERALA RICE KHEER




Pal Payasam is a special Kerala dessert made with Milk and Rice on festivals such as Onam, Vishu etc. 

Ingredients:

1. Jeeragasala Rice- 1/4 cup
2. Milk- 1 litre
3. Sugar- according to your taste
4. Cardamon powder- 1 tsp
5. Ghee- 1 tbsp
6. Cashew nuts and Raisins- 1 tbsp each
7. Water- 1/4 cup
8. Salt- pinch

Wash Rice and drain.

Take a cooker. Boil 1/4 cup Milk and 1/4 cup water together. Add Rice when it starts boiling. Close cooker. Initially don't put whistle. When steam starts coming heavily through the whistle hole put the whistle on and reduce flame to low. Cook for exact 5 minutes on simmer. After 5 minutes turn off gas and let it rest for 30 minutes.

In a pot mix rest of the milk, Sugar, Cardamon powder, Salt and bring it to boil. Add Rice and mix well. Stir continuously in low-medium flame till it thickens and becomes slightly creamy.

Heat Ghee. Roast Cashew nuts and Raisins separately. Add roasted nuts, Raisins and left over Ghee to the Payasam and combine well. 

Mouth watering Pal Payasam is ready.

Notes:

Jeeragasala Rice can be substituted with Basmati or any Rice of your choice.
