Kozhikode Special Mathi Adukiyath
MATHI ADUKIYATH
Mathi Adukiyath is an all time favorite curry in my family. This is a special delicacy from Kozhikode. Its best with Tapioca, Rice etc. I guarantee you will make this again and again once you have it.
Ingredients:
1. Mathi / Sardine- 1/2 kg
2. Coconut oil- 4 tsp
3. Red Chilli- 18
4. Coriander seeds- 2 tbsp
5. Peppercorns- 1 1/2 tsp
6. Turmeric powder- 1 tsp
7. Fenugreek seeds- 1/2 tsp
8. Shallots diced into thin slices- 4 tbsp
9. Chopped Ginger- 1 tsp
10. Chopped Garlic- 1 tsp
11. Curry leaves
12. Kudampuli / Pot Tamarind- 3
13. Water- 1 cup
Wash Sardines well and make close cuttings on both sides.
Soak Kudampuli in some water.
Grind Red chilli, Coriander seeds, Peppercorns and Fenugreek seeds to a fine powder.
Mix Shallots, Ginger, Garlic, Curry leaves, Turmeric powder, salt, Kudampuli and powdered masala. Mix thoroughly with your hand and keep aside.
Take a clay pot / meen chatti. Pour 2 tsp of Coconut oil. Place half of the Sardines as a layer. Top it with half of the thoroughly mixed masala. Above it repeat another layer of Sardines followed by a layer of masala. Pour 2 tsp of Coconut oil and water on top. Cook on high flame. Cook on low-medium flame once it starts boiling.
The gravy should well coat the Sardines and the curry has a very thick gravy. Once cooked well, sprinkle some Curry leaves on top.
Enjoy with hot Rice or Tapioca.
Notes:
1. It should be cooked in a clay pot for its real taste.
2. Taste increases when had after keeping it overnight or the next day.
