Kashmiri Cauliflower


KASHMIRI CAULIFLOWER / KASHMIRI GOBI




Kashmiri Cauliflower is a flavor packed curry and it goes well with Roti, Chapati etc. It is sweet and spicy.

Ingredients:

1. Cauliflower florets- 3 cup
2. Turmeric powder- 1/2 tsp
3. Salt- as required
4. Oil- as required
5. Cashew nuts- 10
6. Raisins- 2 tbsp
7. Kashmiri Chilli powder- 1 1/2 tbsp
8. Mustard- 1/4 tsp
9. Cumin- 1/2 tsp
10. Clove- 2
11. Cinnamon- 2 inch piece
12. Vegetable Ghee / Dalda- 1 1/2 tbsp
13. Onion- 2
14. Ginger Garlic paste- 1 tsp
15. Chopped Tomato- 2
16. Vinegar- 1 tbsp
17. Water- 1 cup

Marinate Cauliflower with Turmeric powder and salt for 15 minutes. Shallow fry in oil till light golden and keep aside.

Soak Cashew nuts and Raisins in water for 20 minutes. Grind it into a paste.

Grind Mustard, Cumin, Clove and Cinnamon into a fine powder.

Heat Vegetable Ghee in a pan. Saute Onion and Ginger Garlic paste till Onion turns light brown. Mix Kashmiri Chilli powder and powdered spices. Saute for 2 minutes. Add Tomato and saute till it turns mushy. Mix the fried Cauliflower. Add Vinegar and water. Stir well. Adjust salt. Cook closed for 5 minutes. Add Cashew nuts-Raisins paste and combine well. Cook stirring occasionally till it reaches the consistency of a roast gravy.

Serve warm and I guarantee you that its super delicious!!!
