Ghee Rice


GHEE RICE




Ghee Rice is a South Indian variety of rice which is very simple to prepare. Its mildly spiced rice and its aroma is irresistible. It goes well with any curry. If not curry its also served with curd salad, Papad and Biriyani Chamanthi.

This recipe will always help you when you have unexpected guests because its that simple to cook.

Ingredients:

1. Jeeragasala Rice- 1 cup
2. Ghee- 1 tbsp
3. Cinnamon- 1 inch stick
4. Cardamon- 3
5. Cloves- 3
6. Bay Leaf- 1
7. Onion sliced thin- 2
8. Boiling water- 2 cup
9. Salt- as required
10. Coconut oil- 1 tbsp
11. Cashew nuts and Raisins- 1 tbsp each

Wash Rice well and drain completely.

Heat Ghee in a cooker. Roast Cinnamon, Cardamon, Cloves and Bay leaf. Saute 1 Onion till it turns transparent. Add rice and saute for 1 minute. Add boiling water and adjust salt. Close the cooker and initially don't put whistle on top. When steam starts coming through the whistle hole, put the whistle on and simmer the flame. Cook for exact 5 minutes on simmer and off the gas. Let it rest for at least 30 minutes.

Meanwhile heat Coconut oil. Roast Cashew nuts and Raisins separately and set aside. In the same oil, saute 1 Onion till golden brown.

Once you open cooker, Mix the roasted Cashew nuts and Raisins. Sprinkle golden brown Onion on top. Mouth watering Ghee rice is ready to be served and wow your guests.

Notes: 

You can try cooking rice the usual way also. I find this easy and less time consuming.
