Eggless Almond Loaf


EGGLESS ALMOND LOAF




This recipe is a loaf cake with the goodness of Almonds. A piece of it with a cup of Coffee or Tea is bliss. 

Moreover its quite easy to make and can be tried when you have an instinct for baking.

Ingredients:

1. Wheat flour- 1 cup
2. All purpose flour- 1/2 cup
3. Baking soda- 1/2 tsp
4. Baking powder- 1/2 tsp
5. Caster sugar- 3/4 cup + 1 tbsp
6. Milk- 1 cup
7. Vinegar- 2 tsp
8. Oil- 1/4 cup
9. Vanilla essence- 1 tsp
10. Chopped Almonds- 1/2 cup

Keep a loaf tin greased and dusted with flour.

Preheat oven for 10 minutes at 180 Celsius.

Mix Wheat flour, all purpose flour, baking powder, baking soda, caster sugar and 1/4 cup Almonds in a bowl.

Mix Vinegar and Milk. Keep aside for 10 minutes. To this, add oil and mix really well. Mix vanilla essence. Fold in the mixed flour well. Pour it into the prepared loaf tin and top it with 1/4 cup of chopped Almonds. Bake for 35 minutes.

Once baked move it to a wired rack and let it cool down completely. Slice it only when it reaches room temperature.


Notes:

1. Caster sugar can be substituted with normal home made powdered sugar.

2. Baking time of 35 minutes may increase. So after 35 minutes check by inserting a skewer. Bake for 5 more minutes if the skewer doesn't come out clean.
