Egg Potato Curry


EGG POTATO CURRY



Simple and easy Kerala style Egg Potato Curry with hard boiled Eggs and Potatoes cooked with whole spices, Onion and stewed in Coconut milk. Its a popular breakfast side dish in Kerala. It goes well with Appam, Chapathi etc.

Ingredients:

1. Eggs- 4
2. Coconut oil- 2 tsp
3. Onion- 2
4. Ginger- 1/2 inch piece
5. Garlic- 3
6. Curry leaves- 1 spring
7. Potato- 2
8. Turmeric powder- 1/2 tsp
9. Coriander powder- 1 1/4 tsp
10. Fennel powder- 1 tsp
11. Salt- as required
12. Green Chilli- 7
13. Thick Coconut milk- 1/2 cup
14. Thin Coconut milk- 3 cup

Boil Eggs and cut each Egg into two.

Chop Potatoes into small cubes.

Heat Coconut oil. Saute Onion, Ginger, Garlic, Green Chilli and Curry leaves adding some salt. Saute till it turns transparent. Add Potato and stir fry for 2 minutes in low flame. Cook closed for 3 minutes in low flame. Add Turmeric powder, Coriander powder and Fennel powder. Saute for 2 minutes. Pour thin Coconut milk and cook everything well stirring occasionally. Once Potatoes are cooked and the gravy is almost dried up, pour thick Coconut milk and combine well. Do not boil. Turn off gas when its about to boil. Add Eggs.

Yummy Egg Potato curry is ready.
