Curd Vada / Thayir Vada


CURD VADA / THAYIR VADA




Curd Vada is a popular snack in India made by soaking Vadas in thick Curd and its everybody's favorite.

Ingredients:

1. Urad dal- 1 cup + 1/2 tsp
2. Rice flour- 1 tbsp
3. Water- as required
4. Salt- as required
5. Oil- for frying Vadas
6. Warm Milk- 1 cup
7. Curd- 2 cup
8. Chopped Green Chilli- 1
9. Chopped Ginger- 1 inch
10. Sugar- 1 tsp
11. Coriander leaves- 3 tbsp
12. Ghee- 1 tbsp
13. Mustard- 1/2 tsp
14. Red chilli- 2
15. Asafoetida- pinch
16. Curry leaves- 1 spring
17. Grated Carrot- 1 tbsp

Soak 1 cup Urad dal for 4 hours. Drain and grind into a fine paste adding 2 to 3 tbsp of water. The batter has to be thick. Transfer the paste into a large mixing bowl. Beat or mix the batter in circular motion for 5 minutes. Mix Rice flour. Add salt. Make vadas and deep fry in hot oil on medium flame till it turns golden brown.

Soak the hot vadas in warm milk for 15 minutes.

In a bowl, mix Curd, Green Chilli, Ginger, Sugar, Coriander leaves and salt. Whisk till it turns smooth.

Drop the soaked vadas into the curd mixture and let it rest for 10 minutes.

Meanwhile, heat Ghee. Splutter Mustard. Roast 1/2 tsp Urad dal followed by Red Chilli, Curry leaves and Asafoetida. Pour it over the Dahi vada.

Garnish with grated Carrot while serving.

Serve it as it is or chilled. I prefer chilled because the Vadas will become soft and juicy when kept soaked for longer.
