Coconut Raisins Pickle
COCONUT RAISINS PICKLE
Coconut Raisins pickle is so delicious beyond words. Chewy Coconut meat and the sweetness of Raisins go amazingly well together.
I asked my beloved husband to buy a tender coconut to make pudding and he got me a normal coconut. There ends my pudding idea and then I thought why not a pickle. If not sweet then I will go spicy today. But this spicy revenge turns out to be a yummy pickle that we finished even before getting the rice on plate.
Ingredients:
1. Coconut pieces/ Thengakoth- 1/2 cup
2. Coconut oil- 4 tbsp
3. Raisins- 1 tbsp
4. Mustard- 1 tsp
5. Fenugreek- 1/2 tsp
6. Garlic- 7
7. Curry leaves- 1 spring
8. Green Chilli- 2
9. Chilli powder- 3 tsp
10. Turmeric powder- 1/4 tsp
11. Asafoetida- 1/2 tsp
12. Vinegar- 2 tbsp
13. Salt- as required
Heat oil. Fry Thengakoth till golden brown and keep aside.
In the same oil fry Raisins and keep aside.
Again in the leftover oil, splutter Mustard and Fenugreek. Saute Garlic, Curry leaves and Green Chilli. Add Chilli powder, Turmeric powder and Asafoetida. Cook till raw smell of powders disappear. Mix fried thengakoth and Raisins. Pour Vinegar and mix well. Adjust salt.
Store in a glass jar and it taste best when had after one day.
Serve with Rice.
