Chettinad Pepper Rice


CHETTINAD PEPPER RICE




Chettinad Pepper Rice is also known as Milagu Saadam in Tamil Nadu. A dish with few ingredients but scores high on flavor profile. 

Ingredients:

1. Jeeragasala rice / Biriyani Rice- 2 cups
2. Cumin- 1/2 tsp
3. Peppercorns- 1 tbsp
4. Red Chilli- 1
5. Mustard- 1 tsp
6. Urad dal- 1 tsp
7. Split Chickpea / Chana dal- 1 tsp
8. Curry leaves- 1 spring
9. Onion- 1
10. Salt- as required
11. Oil- 2 tbsp

Cook rice and keep aside.

Dry roast Cumin, Peppercorns and Red Chilli. Once cold grind them finely.

Heat Oil. Splutter Mustard. Roast Urad dal, Chana dal and Curry leaves. Add Onion and saute till wilted. Mix the rice and the masala power. Add salt. Toss well. Cook for a couple of minutes stirring occasionally. 

Serve hot with Raita.
