Carrot Cupcake
CARROT CUPCAKE
These Carrot cupcakes will surely become a favorite in your baking repertoire. Carrot cupcakes are soft, moist and delicious.
Ingredients:
1. Grated Carrot- 1/4 cup
2. All purpose flour- 1/3 cup
3. Salt- pinch
4. Baking powder- 1/2 tsp
5. Sugar- 1/3 cup
6. Oil- 1/4 cup
7. Vanilla essence- 3/4 tsp
8. Honey- 3/4 tsp
9. Egg- 1
10. Custard powder- 1 1/2 tbsp
11. Milk powder- 1 tbsp
Mix flour, salt and baking powder together.
Preheat oven at 180 C.
In a blender add Carrots, Sugar, Oil, Vanilla essence, Honey, Egg, Custard powder and Milk powder. Grind them so well that there are no more pieces in it. Pour it into a mixing bowl. Fold the flour mix. Scoop this into cupcake molds. Make sure you fill only 3/4th of the cup. Bake for 18 to 20 minutes.
Notes:
You can add chopped nuts if you want.
