Baingan Bharta


BAINGAN BHARTA




Baingan Bharta is a North Indian curry made by roasting the Eggplants or in other words cooking directly over the flame till the skin is charred. This delicious curry can be served with Chapati, Roti etc

Ingredients:

1. Eggplant / Brinjal- 3; medium size
2. Lime juice- 2 tbsp
3. Oil- 2 tbsp
4. Chopped Onion- 1
5. Chopped Garlic- 3
6. Chilli flakes- 1 tsp
7. Chopped Tomato- 1
8. Chlli powder- 1 tsp
9. Turmeric powder- 1/2 tsp
10. Garam masala- 1 tsp
11. Coriander leaves- 1 tbsp
12. Salt- as required
13. Water- if required

Prick the Brinjal all over with a knife. Roast it over an open flame till its cooked well. Peel the skin and mash it well. Mix Lime juice and keep aside.

Heat oil. Saute Onion, Garlic and Chilli flakes till Onion turns light golden. Add Tomato and Turmeric powder. Saute till Tomato turns mushy. Add Chilli powder and Garam masala. Saute well. Incorporate mashed Brinjal and add water only if necessary. Adjust salt. Mix Coriander leaves. 

Delicious Baingan Bharta is ready. Serve warm.
